Midweek


Mom and sissy came back from Thailand yesterday and I decided to surprise them with breakfast as a "welcome-home" gift. Decided to make the simplest yet delicious breakfast for them and I'm glad they liked it. It's so nice to watch them eat with satisfaction and the smiles plastered across their faces were priceless. That was probably the highlight of my day.

Anyway, eggs in the basket is probably one of the easiest breakfast to make. Got this recipe from Laura Vitale! Everyone should check out her website! But if you're too lazy... Here's the recipe! 

Things you need:
2 Slices of White Bread (make sure it’s a good kind)
(I used wholemeal bread though)
2 Eggs
1 ½ Tbsp of Unsalted Butter
Salt and Pepper, to taste

 Process:
 1) Using a biscuit cutter or a glass, cut a hole in the center of each slices of bread.

2) Melt the butter in a non stick skillet over medium low heat, add the slices of bread (with the hole in the center) and crack an egg right in the center.

3) Season the egg lightly with salt and pepper and let it cook for 1 to 2 minutes on each side. Make sure you also add the pieces of the bread that you have cut out, place them in the skillet along with the eggs in a basket and cook that for the same amount of time.  

And you can serve it the way you like it (depending on your creativity)! Enjoy :)
